Sheet Pan Protein Pancakes

Why This Works

This is one of the easiest breakfasts I make when I want something consistent for the week. Everything goes into the Vitamix, the batter comes together in minutes, and the result is a soft, cake-like pancake you can slice and store.

Ingredients

Grains
1 ½ cups rolled oats
1 cup all-purpose flour
Protein
2 scoops protein powder
2 tbsp flax meal
Liquids
1 ¾ cups oat milk (or half & half)
¾ cup Greek yogurt
Binders
2 large eggs
3 tbsp maple syrup
Lift & Flavor
2 tsp baking powder
1 tsp vanilla
Pinch of salt
Topping
Chocolate chips or berries

Directions

Prep
Preheat oven to 425°F. Grease or line a 10x15 sheet pan.
Blend
Blend oats, flax, and protein powder until fine.
Add remaining ingredients and blend until smooth.
Finish
Add flour and baking powder. Pulse just until combined.
Bake
Pour into pan, top, and bake 12–15 minutes.
Store
Cool, slice, and store for the week.
